Supreme Pork Chops (排骨王)





Supreme Pork Chops (排骨王) is another popular sze dish which is succulent and the amazing sauce that goes with it.

In this recipe, i use pork shoulder which i find it to be more tender.To prepare the pork shoulder,  I use the back of the knife to chop the pork which will "loosen" up the meat and thus tenderize it.

There are 101 ways of different sauces for this dish.
Some recipes  have chilli sauce or curry powder.My recipe of the sauce is derived from a cookbook passed down from my mum.

Once again, it's not difficult to cook.Try it!

Recipe(Prep 10 mins, Cooking time 10 mins)
(Serves 4)

Ingredients:

  • 350g pork shoulder butt
  • half portion of egg white
  • 3 tbsp corn flour
  • 1 tsp roasted sesame seeds



Marinade(pork shoulder):

  • 1 tbsp light soy sauce
  • 1/2 tbsp oyster sauce
  • 1/2 tsp sesame oil
  • A dash of white pepper


Sauce:

  • 6 tbsp tomato sauce
  • 2 tsp worchestershire sauce
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 tsp light soy sauce
  • 6 tbsp water


Steps:

1)Cut pork shoulder into bite sizes and use the back of the knife to chop both side of the pork chops(a method to tenderize the meat)

2)Marinade pork shoulder for at least 2- 3 hours.

3)Add half egg white to marinated pork shoulder and 3 tbsp of corn flour.Mix it thoroughly until a layer of batter covers all the pork chops,

4)In a pot of heated oil, deep fried pork chop until golden brown.Set aside.

5)Combine sauce in a pot and heat to a boil. Thicken with corn starch.

6)Off the heat,toss pork chops into the sauce and toss the pan to incorporate pork chops with sauce.

7)Sprinkle with roasted sesame seed on pork chops and serve.
