Crispy Calamari/Prawns with Cereal






Eating seafood at restaurants are never cheap where it's common to pay $20 for cereal prawns or calamari.Com'on....i don't need to pay your rental or waiters' salary, it is so cheap to buy my own seafood and cook it right at home

The first time i cooked this, i bought those pre-mixed cereal pack which was too salty.When it comes to cooking, you definitely cannot rely on those pre-mixed packages. Either they are ladened with preservatives/MSG or they gives you the instant food quality type of food.

The recipe i am sharing here is my own concoction of cereal mix, after some reference and modifications from some online recipes.You can also use prawns,chicken or even fish to go with the cereal mix.

It is not a difficult dish but it's definitely worth the money to cook this at home.

Recipes(Prep 8 mins, Cooking time 10 mins)
(Serves 4)


Ingredients:

  • 2-3 large squids or 8 large sea prawns
  • 1 chilli padi,cut (omit if you don't like it spicy)
  • Handful of curry leaves (washed and dry)
  • Corn flour
  • 1 egg white
  • 2 tsp butter


Cereal Mix(combined):

  • 1 cup Nestum cereal
  • 1 tbsp milk powder
  • 1tbsp sugar
  • 1tsp salt



Steps:

1)Rinse, wash and cut squids into rings. For prawns, devein, cut and split the back of the prawns. Keep the shell intact for the extra crisp and crunchiness.
Set aside.

2)Dip squid rings/prawns into egg white and coat with corn flour.

3)Use a deep pot or deep fryer and test oil temperature by dipping chopstick into the oil.When you see bubbles bubbling, the oil is ready.Deep fry squid rings/prawns with the hot oil, until golden brown. Set aside.

4)In a frying pan, heat 2 tbsp of butter and be careful not to brown it.Toss in cut chilli padi and curry leaves. Stir fry for 30 seconds and add in the cereal mix. Turn the heat to low and continue to stir fry the cereal until fragrant and slightly brown, taking care not to burn the cereal.

5)Lastly, add in fried calamari/prawns and toss the pan to incorporate the cereal with the calamari.Serve!
