Club Sandwich with Greens in Balsamic Vinegratte


Weekend is always the moment whereby I will prepare a sumptuous breakfast for my family.

After a long week of hard work at office and school for the children, I like to put smiles on my family members when they wake up to a home cooked breakfast.
Some of you may ask, "isn't it more convenient to eat at cafe?"Well, cafes are usually packed during weekend mornings and most items on the breakfast menus aren't cheap too.That is why I prefer to escape the weekend crowd and cook my cafe inspired breakfast at a fraction of the cost.

My breakfast recipe here is inspired by the Club Sandwich from Paris Baguette.


Recipe ( Prep 5 mins, 15 mins)
( Serves 2)

Ingredients:
3 slices of bread
1 piece chicken filet
1 egg
2 pieces bacon
2 servings of waffles fries
lettuce
2 servings of salad green

Seasoning:
Salt & pepper

Dressing(combined):
3 tbsp mayonnaise
Zest of 1/2 lemon
A squeeze of lemon juice

Balsamic Vinaigrette(combined ):
3 tbsp olive oil
1 tsp balsamic vinegratte

Steps:

1) Butterfly-cut the chicken filet(which is to slice the filet horizontally in  half and stop just about the edge, the filet will thus opens up like a butterfly)

2) Season filet with salt and pepper.On a hot pan, pan seared the chicken until
just cooked.Set aside.

3) Toast the breads on both sides.Set aside.

4) Fried an egg and the bacon.Set aside.

5)To assemble, spread lemon mayonnaise dressing on 2 slices of bread. Spread lettuce on 1st slice of bread,  followed by the chicken filet and the 2nd slice of bread. Then top with fried egg and then crispy bacon. The final slice of bread goes on top.

6) Secure the sandwich with cocktail sticks on 4 sides.Slice the sandwich into 4 servings. Serve with waffles fries and salad green with balsamic vinaigrette.
