Sweet Corn, Carrot and Onions with Pork Ribs Soup (ABC Soup)




Another variant of the famous ABC soup. The reason why this particular soup is named ABC, is because this soup contains Vitamins A, B and C.
Carrots= Vitamin A, Corns= Vitamin B and Onions=Vitamin C

There are many variants to ABC soup. Some recipes call for tomatoes or potatoes and it is up to individuals on which type of root vegetables you like in your soup.
Personally, my family loves ABC soup with corn. The fragrance of the corn infused into the broth and the sweetness of the carrots and onions, will bring the soup to an new level.

For all my soup recipes, I use pressure cooker to minimize cooking time, achieving 老火汤 quality of soup in just 30 minutes. Normal cooking over the stove will take you at least 2 hours to achieve the same quality.

With all the fresh and sweet root vegetables in this recipe, you do not need any chicken seasonings.
All you need is just SALT to bring out the flavors and taste.

Simple ingredients and straight forward recipe, you will be surprised how flavorful this soup is going to be. Most important of all, this is a very healthy soup.



Recipes(Prep 10 mins, Cooking time 30 mins)
(Serves 3-4)

Ingredients:
250g pork ribs
2 sweet corns, chopped into chunks(corns from thailand are usually sweeter)
2 large carrots(about 180g), chopped into chunks
Half portion yellow onion
1500ml water

Seasonings (A):
1 1/4 tsp sea salt to taste


Steps:
1) Blanch pork ribs in boiling water for about 5 mins, to remove scums
(blanching will remove "impurities that will affect your soup flavor and enhance the clarity of the soup)

2) Drain off boiling water and wash ribs under tap water, to remove excess scums.

3) Combine all ingredients in a pressure cooker and cook for about 30 mins.

4) Release pressure and filter soup with a oil filter ladle.
(Stocks made with pork or chicken can be pretty oily. By filtering the oil away, your soup will be nutritious and oil free)

5) Lastly, add in salt to taste and serve.
