Home Made Pancakes with Banana and Strawberry.

 





Pancakes are one of the favourite breakfast in my family.However, i will never ever settle for those pancakes mixes from the supermarket shelves(no thanks to the additions of preservatives)

The key to good home-made pancakes is the whipping of egg whites(no short cuts allowed for this)
In order to have airy and fluffy pancakes, eggs white has to be whipped until soft peak forms. You can either use a hand blender with a whipping wand or hand whip it manually.

Another key step is the folding in of egg whites into the batter. Folding in of eggs whites has to be done in a circular directed motion.You definitely need a spatula for the job. Over stirring will destroy the air bubbles in the egg whites and you will not have a fluffy pancakes.

The recipe i am sharing here is my modification of recipe from a Taiwanese author of a cookbook named Parandal. I am at awe and always inspired by her simple and gorgeous breakfast ideas.



Recipes(Prep 30 mins, Cooking time 5 mins)
(Serves 3-4)

Ingredients:
120g plain flour
1tsp baking power
1/4 tsp salt
20g sugar
2 eggs( yolks and white to be separated)
170ml milk
20g melted butter

Steps:
1)In a bowl, add in 2 egg yolks, milk and salt.

2)Add in sifted flour and baking powder into the bowl and then the melted butter.

3)Adding sugar slowly to the egg whites, beat the whites until soft peaks form.

4)Add in whipped eggs whites slowly into the flour mixture and fold( use a spatula and fold in a circular direction)

5)Heat up pan on low heat and use a ladle to scoop batter into pan. If your batter is of correct consistency, the batter will form a perfect round shape.

6)Flip pancakes over when bubbles start to appear on the surface. Continue to cook for the other side.

7) Once pancakes are well browned and cooked, add banana and strawberry slices on top. Serve with maple syrup and butter.
