Crispy Fried Prawn Omelette




Why pay $10- $11 at sze char and taiwan porridge restaurants for a prawn omelette which you can whip this up at home in just 5 minutes?

Whenever i dine out with my family, eggs dishes are the last thing i will ever want to order. They are horrendously overpriced for such a simple low cost food, imagine a carton of eggs cost just $2.40!

The trick to a good prawn omelette is a well heated pan with hot oil. When the egg mixtures goes into a well heated pan, it will fluff up and sort of bubbles up. The end results will be a crispy and well browned omelette.

In this recipe, i added onions to balance the flavor of the savory omelette. Adding in spring onions will bring more fragrance to the omelette.


Recipes( Prep 5 mins, Cooking time 5 mins)
(Serves 2)

Ingredients:
3 eggs
20g onions(sliced)
80g fresh prawns(diced)
1 stalk spring onions(sliced)

Seasonings(A):
1/2 tsp light soy sauce
1/4 tsp sugar
Dash of white pepper


Steps:

1)Combine ingredients and seasonings in a mixing bowl. Beat eggs evenly to incorporate all ingredients.

2)Heat 3 tbsp of oil in cooking pan until smoking.

3) Pour eggs mixture into pan and swirl the eggs around the pan. Fried eggs until brown and crispy on both sides.

4) Serve, with garnish of coriander and red chili shreds
