String Beans Omelette




Simplicity at it's best.My mum would often cook this strings beans omelette when i was young.I am sure this is the ultimate comfort food for most of us and it is soooo simple and quick to whip up one to go with porridge.

In my recipe, i added soy sauce to add a savoury taste and colour for the brown crisp look. A little sugar to balance the flavour.

So any tips for this? it has to be hot pan and hot oil.


Recipes(Prep 5 mins, Cooking time 6 mins)
(Serves 3-4)


Ingredients:
80g long beans(thinly sliced)
4 eggs


Seasonings(A):
3/4 tsp light soy sauce
1/4 tsp sugar


Steps:

1)Add 4 eggs in a mixing bowl and whisk.

2)Add in seasonings. Whisk to incorporate into eggs mixture.

3)Preheat pan and add in 2 tbsp of oil. Once oil is smoking, add in string beans and stir fry for about 1 min.

4)Add in eggs mixture and fry until crispy and brown.

5)Flip omelette and continue to brown for the other side.

6)Lastly, serve
