Stir Fry Prawns with Tomato Sauce, Infused with Coriander and Spring Onions
My inspiration for this dish comes from my mother-in-law which i have never asked for the recipe.This stir fry prawns with tomato sauce is one of her signature dish whenever there are family dinner gatherings.
The sweetness of the tomato sauce that is infused with coriander and spring onions, makes it an ideal compliment to the crunchy prawns.
For the type of prawns, I will only recommend only ang ka(红脚) prawns or any sea prawns. From my past experiments, farmed prawns will not have the crunchy texture and sweetness to it. I usually buy those frozen ang ka prawns from NTUC supermarkets and relatively cheap.
Some people says that frozen prawns are not fresh or have "frozen taste" which i think are nonsense.The current technology of IQF freezing is now able to lock in the moisture and freshness of the prawns. Even if you buy unfrozen prawns from the wet market, you will end up freezing it as we usually buy few days supplies of food (unless you have the time to go market everyday)
The recipe I'm sharing here is my own interpretation of my mother-in-law dish which my kids love to the maximum.
Recipe(Prep 10 mins, Cooking time 10mins)
(Serves 4)
Ingredients:
330g sea prawns, deveined(about 14 prawns)
2 cloves garlic(minced)
1 stalk spring onion(chopped in 5cm length)
1 stalk coriander(chopped in 5cm length)
Combined Seasonings(A):
5 tbsp tomato sauce
6 tbsp water
1 tbsp sugar
1 tsp light soy sauce
Steps:
1)Heat 1 tbsp oil in a pan. Add in minced garlic and spring onion stalks.Fry until fragrant.
2)Add in prawns and stir fry until 75% cooked.
3)Add in combined seasonings(A) and continue stir frying until prawns are just cooked.
4)Toss in chopped coriander and spring onion leaves, stir to combine and turn off heat.
5)Lastly, serve.
