Silky Smooth Steamed Eggs with Crabsticks, Shitake mushrooms and topped with Crispy White Baits.

Chawan mushi is one of my kids' favourite food because of it's smooth and silky texture.When it comes to steamed egg, you can be versatile with the ingredients.Probably the most common type of steamed egg is the one with minced pork which is one of the comfort food of every chinese family.

So how to properly steam a egg mixture with a smooth and silky texture?

There are 3 crucial steps.
1)Sieve the eggs mixture with a fine strainer.

2)Pouring of eggs into steaming plate,  has to be slow and close to the plate.This is to prevent introducing air bubbles into the egg mixture.

3)Always steam with low heat.If your water is boiling too vigorously, you cannot achieve the silky smooth texture.

In my recipe, i added in crispy white baits to add another level of texture to the dish.Adding in spring onions will add fragrance to the dish as well.



Recipe (Prep 5 mins, Cooking time 20 mins)
( Serves 3-4 )


Ingredients:
3 eggs
35g shitake mushroom(sliced)
2 pieces of crabsticks(shredded)
White baits(pan fried until crispy)
Spring onions(finely chopped)

Seasoning(A):
280ml water
1 tbsp light soy sauce
1/4 tsp sea salt
Dash of white pepper


Steps:

1)Combine 3 eggs with water and seasoning(A)

2)Strain the egg mixture with a sieve. Discard the remains left on the sieve.

3)Pour the strained egg mixture slowly into a steaming plate.

4)Sprinkle shredded crabsticks and sliced mushroom evenly into the egg mixture.

5)Cover the plate with a aluminium foil and leave a little gap for steam to escape. Set aside

6)To prepare for steaming, bring the water to a boil for the steamer pot.

7) Lower heat to low and position the egg mixture plate into the pot.

8) Steamed at low heat for about 20 mins until fully cooked.

9) To serve, sprinkle crispy white baits and chopped springs onions on top.
