Stir Fry Pork and Shitake Mushroom with Ginger and Spring Onions.
Savoury, sweet and aromatic, stir fry pork with ginger and spring onions (葱姜猪肉) is the typical home-cooked dish of any household. It can be a one dish meal after a hectic day at work, making it delectable with just white rice.
My version here includes Shitake mushrooms which you can choose to omit. Pork has to marinated in advance including corn starch, which serves an important purpose of making the pork tender and smooth.Therefore, i will marinate it the night before and store it in the fridge.This will allow me to save time on marination when i reached home after work.
The cooking time must be swift and quick in order not to overcook the pork which I have my fair share of overcooking this simple looking dish too.
Recipe(Prep 30 mins, Cooking time 6 mins)
(Serves 3-4)
Ingredients:
120g lean pork(sliced)
80g shitake mushrooms(quarterly diced)
10g ginger(thinly sliced)
2 stalks spring onions(stalks and leaves separate)
Corn starch solution
Marinade(A):
1/2 tsp light soy sauce
1/2 tsp oyster sauce
1/4 tsp sesame oil
1/2 tsp cornflour
Seasonings(B):
100ml water
1/2 tsp dark soy sauce
1/2 tsp oyster sauce
pinch of salt
Steps:
1)Marinade pork slices with marinade(A) for at least 30 mins(ideally 3-4 hours marination will give better flavour)
2)On high heat, heat about 1 tbsp oil in pan and saute ginger and spring onion stalks til fragrant.
3)Add in pork and stir fry until about 75% cooked.
4)Add in seasonings(B) and turn down flame to medium high. Slightly simmered for 1 min.
5)Add in corn starch solution to thicken up the gravy.
6)Once thicken, toss in spring onion leaves.
7)Lastly, serve with white rice
