Aglio Olio is a traditional Italian pasta dish which simply means garlic and oil. It is prepared by lightly sautéing minced garlic in olive oil.
The original Aglio Olio recipe calls for only pasta, garlic, olive oil and salt & pepper.Grated parmesan cheese and chopped parsley is then added as a final touch to the dish.
Tradition aside, i like to add shitake mushrooms to my Aglio Olio and a little chilli padi for an extra punch.
Recipe ( Prep 5 mins, Cooking time 12 mins)
( Serves 1)
Ingredients:
- 80g pasta (1 serving)
- 10g minced garlic (2 cloves)
- 35g shitake mushroom (about 4 pieces sliced)
- 1/4 chilli padi (cut)
- 2 tsp olive oil
- 1 tbsp water (reserved water from cooking pasta)
- 1/2 tsp salt
- dash of black pepper
- Grated parmesan cheese
Steps:
1) Cook pasta in salted water until al dense. drain and set aside. Retain the pasta water.
2) In a pan, add 2 tsp of olive oil and minced garlic, chilli padi and sliced mushroom(use medium low heat or else garlic will burnt)
3)Stir fry garlic and mushroom for about 30 seconds and toss in the pasta.
4) Add 1 tbsp of pasta water, followed by 1/2 tsp salt.
5) Toss the pasta and let salt dissolve and water drys out.
6) Add black pepper and toss pasta to incorporate.
7) Serve pasta on plate and sprinkle chopped coriander and grated parmesan cheese on top.
